EXTRA-VIRGIN OLIVE OIL
Our extra-virgin olive oil is produced only through a physical-mechanical process.
This method allows to preserve the olives organoleptic properties.
This product has a degree of acidity lower than 0,5% (0,8% is the limit imposed by Italian laws).
The olives are directly picked by hands and they are turned into oil in 24-48 hours.
Our oil is produced by using two typical local olives varieties.
From the first variety, called “Coratina”, we obtain a rich green oil. It is fruity, full-bodied and it keeps a long time.
From the second variety, called “Ogliarola barese”, we obtain a gold yellow oil which has a refined taste.
This variety is tilled only in the city of Molfetta and in few neighbouring cities.
By mixing the two kinds of oil in the right amount, we produce a soft gold green oil.
It smells of fresh olives and it is lightly spicy, palatable, with an almond aftertaste.
This product is put on the market both natural (featured by a dull green colour but with a stronger taste) and filtered (percolated through cotton wool which stops even the smallest particles).
It is available in the following lines, with a shelf life of 18 months if properly kept (far from light, heat and air)
Extra-virgin olive oil – “etichetta verde” line - It is obtained through a cold centrifugation, in stainless steel machineries, using the olives previously pressed.
It is available both natural and filtered in 0,5 - 0,75 - 1 litre dark glass bottles (featured by round or straight sides) or in 5 litres tin.
Extra-virgin olive oil – “etichetta verde” line – D.O.P. - It is produced as the first one and it is guaranteed by the European Community and by the Italian Ministry for Agricultural and Food policies.
It is obtained from the olives tilled as the specifications provide.
It is available both natural and filtered in 0,5 - 0,75 - 1 litre dark glass bottles (featured by round or straight sides) or in 5 litres tin.

Extra-virgin olive oil – “Goccia di Sole” line - It is obtained through the dripping method which exploits the different surface tension between the oil and the vegetation water present in the olive paste.
Some stainless steel blades gently gather the small oil drops in bigger drops that are collected in a specific container.
This method is very slow and less oil is extracted but it allows to produce a high quality oil which keeps smells and taste for longer. It has a high E-vitamin amount. This molecule shows antioxidant properties therefore the oil scent remains unchanged.
This is the best product for dressing salads.
It is available both natural and filtered in 0,25 – 0,5 - 0,75 litre dark glass bottles (featured by round or straight sides) or in 3 litres tin.
Extra-virgin olive oil – “Goccia di Sole” line – D.O.P. - It is produced as the last one and it is guaranteed by the European Community and by the Italian Ministry for Agricultural and Food policies.
It is obtained from olives tilled as the specifications provide.
It is available both natural and filtered in 0,25 - 0,5 - 0,75 litre dark glass bottles ( featured by round or straight sides) or in 3 litres tin.

Extra-virgin olive oil – “Goccia di Sole” line – ORGANIC - It is produced with the same typical method of the whole line.
The peculiarity of this product is related to the natural cultivation method used for the olive trees .
This particular farming technique is obtained by avoiding chemical fertilizers and pesticides.
It is available both natural and filtered in 0,5 - 0,75 litre dark glass bottles (featured by round or straight sides) or in 5 litres tin.

PATE’
They are the most peculiar product among our range.
The main ingredients such as olives and other vegetables are tilled by the farmer members of our company.
These tasty creams are used at their best for making appetizers and for flavouring some dishes such as grilled meat.
They are plainly produced with the “Goccia di Sole extra-virgin olive oil”.
They are available in 212 ml and 106 ml jars and in the following kinds, with a shelf life of 18 months.
Green olives pâté: typical green olives(Pasola and Termite di Bitetto varieties), capers, garlic, hot pepper, parsley and extra-virgin olive oil.
Black olives pâté: typical black olives(Leccino variety), capers, garlic, hot pepper, parsley and extra-virgin olive oil.
Tomatoes pâté: tomatoes, capers, garlic, hot pepper, parsley and extra-virgin olive oil.
“Lampascioni bulbs” pâté: bulbs of Muscari comosum (typical of our territory, with a sour but palatable taste), capers, garlic, hot pepper, parsley and extra-virgin olive oil.
Apulian bomb pâté: typical peppers, capers, garlic, hot pepper, parsley and extra-virgin olive oil.
“Piccantella” pâté: typical peppers, capers, garlic, very hot pepper, parsley and extra-virgin olive oil.

TARALLI
They are oven-products, typical of the southern Italy gastronomy.
They are produced following an old, traditional recipe and mixing the natural ingredients with our extra-virgin olive oil.
You can use them as snacks or to substitute the bread.
Our “taralli” are produced using the following ingredients: “00” flour, salt, yeast, wine and our extra-virgin olive oil.
They are also available flavoured with:
- Black pepper
- Tomato
- Onion
- Hot pepper
- Rosemary
- Fennel seeds
- A mix of pepper, hot pepper, onion, rosemary and fennel seeds
They are available in 500 g size pack and have a 18 months shelf life.
